With pour-over you work with a much higher water-to-coffee ratio (roughly 1:15 to 1:17) and without pressure. The light, fruity and floral aromatics come through more clearly because they aren't masked by heavy bitter compounds and oils. A slower, circular pour extends contact time and pulls out more body and sweetness; a quicker pour keeps extraction shorter and highlights the lively acidity. Our starting point: 15 g coffee, medium-fine, 250 ml water at 93–96 °C, about 30 seconds blooming with 30 ml, then pour in two to three pours, total time roughly 2:30 to 3:00 minutes.
